Wheat Pancakes For Picky Eaters

I held my breath, and watched my 12 year-old picky eater eat my healthy blender pancakes today! Hooray and hallelujah!! She of course looked at them suspiciously and asked what was in them.

I carefully told her they had wheat, oats and white flour. And that her mother was the Food Storage Organizer. She slowly decorated them how she usually does her Krusteaz-pancake-mix-relatives with thawed cut up strawberries and powdered sugar. She doesn’t like pancake syrup, but who’s complaining?

I tried to keep my eyes on my own plate and not hers, but bite by bite she ate the whole plate of them! Not wanting to make a big deal of it, I didn’t jump up and down. But inside I was doing somersaults. I even forgot to add the vanilla and cinnamon. 🙂

Give them a try and see if your pancake-mix-only-eater will eat these. Perhaps I have a convert.

  1. In a blender, blend water, wheat flour, oats and dry milk on high for 1 minute.
  2. Add egg, oil, honey, salt, cinnamon and vanilla. Blend 20 seconds more.
  3. Add baking powder then pulse-blend 3 times—just enough to mix. Mixture will foam and get very light.
  4. Preheat griddle to 375 degrees. Pour batter on hot non-stick or lightly greased griddle.
