With two very ripe bananas sitting on my counter, I decided to look in our neighborhood cookbook for a recipe. This Banana Snack Cake was submitted by Karen Petersen, and is very easy. Because my family at home is small, we nibbled on it for several days.

Banana Snack Cake

Serves 12
1 c. margarine, softened (or butter)
1 c. sugar
2 eggs (or powdered)
1/2 c. buttermilk (or regular; could use powdered)
1 c. mashed bananas (about 2 small)
1 t. vanilla
2 c. flour
1 c. oats
1 1/2 t. baking soda
1/2 t. salt
6 oz. semi-sweet chocolate chips (or mini)
1/2 c. chopped nuts (optional)
- Grease 13×9 inch pan.
- Cream margarine, sugar, and eggs.
- Stir in buttermilk, bananas, and vanilla, mixing well.
- Stir in flour, oats, soda, and salt. Mix well again.
- Stir in nuts on top
- Bake at 350 degrees F. 30 to 35 minutes.
